This recipe has the two things you look for in a meal, a ton of flavor, and it's easy to put together!

My family and I like to camp when we can, but trying to find meals to make when you don't have all the comforts of home can be difficult. There's always hot dogs, sandwiches, and hamburgers, but they're hot dogs, sandwiches, and hamburgers if you catch my drift. You can only do the same thing over and over again for so long.

This Sweet and Spicy Sausage and Peppers recipe is a favorite of mine at home and translates easily to the campsite. It can be put together in a pot, or thrown together in an aluminum foil bag and cooked over an open fire, or a camping stove like I use.

Ingredients

  • 2 pounds smoked sausage
  • 1 large onion
  • 2-3 green peppers
  • 1-2 jalapeno peppers (remove the seeds for less heat)
  • 1 - 10 ounce jar of sweet and sour sauce
  • Your favorite hot sauce (I use original Tabasco)
  • Cooked white rice (optional)

Directions

The following instructions are based on how I prepare the meal at the campsite.

Chop the sausage, onion, green pepper, and jalapeno. Grill on a flattop separately, and combine in large pot.

Add the entire jar of sweet and sour sauce, along with as much or as little hot sauce as you want. Stir until mixture is heated through.

We like to serve ours over white rice, but you could certainly substitute with brown rice, pasta, or just eat it as is. You can't go wrong!
